Le Cuvier isn't just a place to taste wine. It's an experience. On my first visit, I was impressed by the size of the crowd on just a regular weekday. My customers got settled into a cozy spot at the wine counter, and immediately remarked on the ambiance, light and design in the tasting room. The wine tasting was presented as a food pairing, running only $20 per person. Beside the wine counter was a large window displaying a chef hard at work in a gourmet kitchen. We found him making some kind of chocolate creation. The food pairing that day included a succulent tenderloin, and cream-filled raspberries. I remember for the first time in a long time actually feeling jealousy for my clients experience here. Some of the parings include gourmet concoctions like: Homemade Arancini, Curried Mushroom Cashew Pâté Balls Smoked Duck with Rhubarb Vinaigrette, Asian Style Beef Tenderloin with Soy Chili Sauce, Pork Tenderloin with Purple Potato Puree & Gremolata , Humboldt fog cheese, Strawberry Chutney with Seascape Cheddar, Every visit to Le Cuvier has been amazing, both for myself and the clients. This amazing chef in his commercial kitchen puts out a variety of fun, but tasty flavors that pair with their wine in unbelievable ways. I learned a plethora of information from the docent, but among that knowledge I give you the most pertinent: * Le Cuvier uses only dry farmed grapes. * Le Cuvier wine makers don't use oak. (There's an entire spiel that goes along with this, including how the grapes create their own unique flavors, and they don't deserve to have the oak make up for their "missing character". ) * They do use barrels, because barrel allow the water in the wine to evaporate through the skin in the barrel, but it's only neutral oak. * Wine is aged for 36 months, or more in each barrel. * Their wine grapes are primarily grown alone the hills in the Adelaide District. My favorite wine at Le Cuvier is the: Chrysos. It's a 75% Viognier, 25% Rousanne blend. I can't tell you what it is, but the Rosanne grapes just make this wine the most perfectly crisp, but also flavorful, fruit forward white blend. It's wonderful.
I also appreciate the Littoral. It's a blend with Petite Verdot, Cabernet Franc, Cabernet Sav, Merlot and Malbec. I think the Malbec gives it that earthly, grounded flavor. I just love the richness and the warm comfort of this wine. I am all about flavor, so this place was made for me.
